Celiac
Disease or Wheat/Gluten Intolerance effects 1 in 133 Americans...
and another figure says over 3 million Americans may have Celiac
disease which unfortunately is considerably under-diagnosed. Most
Americans who are diagnosed are of European descent and are between
the ages of 30 and 45. However anyone at any age can have the problem.
And, unfortunately it is also a genetic disease. So if your Aunt
Mary has it, chances are you might have it too. Testing is fairly
simple and involves either screening the patient's blood for antigliadin
(AGA) and endomysium antibodies (EmA), or doing a biopsy on the
areas of the lamina propria and crypt regions of their
intestines, which is still the best way to diagnose the disease.
The only acceptable treatment for Celiac Disease is strict adherence
to a 100% gluten-free diet for life. This avoidance can prevent
almost all complications caused by the disease. A gluten-free
diet means avoiding all products that contain wheat, rye and barley,
or any of their derivatives. This is a difficult task as there
are many hidden sources of gluten found in the ingredients of many
processed foods.

without any wheat or gluten. Even if you don't have a problem with

BREAD. What do
I do now? You ask yourself... Steve has
some tips for you. Wheat free gluten free
breads taste great! Although most of them you have to toast. Steve
is working on some new bread recipes -coming soon -to make
the ultimate
"don't have to toast" wfgf bread (mmmm. peanut butter and
jelly...). His french bread recipe is very tres bonne merci. |

smart! Steve's attitude
towards cooking is to have fun in the kitchen not be a slave
to it. Cook foods that you like, don't omit them from your diet

Well first of all, if you're on this site, you probably
already know you have to avoid anything containing
the grain wheat and the
protein found in wheat, gluten. Gluten is
a protein found in wheat, oat, barley, rye and foods containing these
ingredients or their derivatives. You should know you can't buy bread
from a regular store, they all contain wheat, even all rye breads.
So avoid all breads unless you buy the wheat free gluten free bread
from a health food section or store, order them online, or make them
yourself from gluten free flour. For more info. on breads, click

NO! This is a healthy alternative, for those who
have Wheat and Gluten Intolerance or Celiac. There is no quick fix
to this problem. There is no perscription drug to take for this. The
only solution is avoidance. And for complete avoidance you really have
to do your homework and think and plan ahead. Steve is trying to save
you the time and frustration and to help you live a normal healthy
life.
